Sweet and Sour Chicken - serves 4 (freezeable)
2 boneless, skinless chicken breasts, diced
1 can pineapple chunks in juice
2 tbsp cornflour
½ tsp dried chilli flakes
2 tbsp dark soy sauce
2 tbsp tomato puree
2 garlic cloves, peeled and crushed
Combine the cornflower and pineapple juice to make a paste.
Stir in the soy sauce, tomato puree and chilli flakes until thoroughly combined, add salt & pepper.
In a large deep frying pan add oil and stir-fry the onion and peppers for two minutes over a high heat.
Add the garlic, ginger and pineapple chunks and stir-fry for 60 seconds before combining everything
Cook until the chicken is tender and cooked throughout.
